Today's recipe is a great one. Easy too. And, of course, delicious. It's made with speculoos spread, which is great by itself (a spoonful every once in a while can't hurt, right? Right???) but it's frankly amazing in these cookies.

After months of semi-hiatus, I'm back! My absence can be easily explained though; I've finally decided to study and professionalize what I really love: baking. I decided doing it so in one of the most prestigious schools, Hofmann School, in Barcelona. And I absolutely love it. However, it means that I don't have tons of free time. And it means that the blog has been very neglected. I plan on publishing more, in fact I have several recipes on hold, but every post takes up some time to make and I simply don't have it right now!

Today's ice cream is a marvelous vanilla ice cream bar -with real Bourbon vanilla bean!- with homemade salted caramel, coated with a dainty coating of milk chocolate and crocanti.
