After months of semi-hiatus, I'm back! My absence can be easily explained though; I've finally decided to study and professionalize what I really love: baking. I decided doing it so in one of the most prestigious schools, Hofmann School, in Barcelona. And I absolutely love it. However, it means that I don't have tons of free time. And it means that the blog has been very neglected. I plan on publishing more, in fact I have several recipes on hold, but every post takes up some time to make and I simply don't have it right now!
For now though, let me show you this delicious Pear and Raspberry Crisp. It's seriously so easy to make that seems ridiculous. Just mix, bake and eat!
And, of course, you can make it with whatever fruits you have available! I just find this combination so tasty, the sweetness of the pear with the acid of the raspberry.
It's also a healthy dessert option, and very appealing if you serve it hot in winter.
Pear and Raspberry Crisp
- 95g oat flakes
- 120g flour
- 180g brown sugar
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 90ml olive oil
- 700g pears
- 50g raspberries
- 100g brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1 pinch nutmeg
- Preheat oven at 205ºC (400ºF).
- Peel and cube the pears.
- Mix fruit with the rest of the ingredients for the filling and set aside.
- Mix all the topping ingredients until well incorporated.
- Divide the filling between the pots.
- Top with the topping.
- Bake for 40 minutes up until golden.
That's it, super easy! A tasty and sweet dessert, ready in a heartbeat, and very easy to make!
